Adobo Chicken You Must Try Once
When I visit, my mom serves saucy chicken adobo.
She claims the vinegar makes leftovers taste better.
Combine first 6 ingredients in a small bowl. Covered, refrigerate chicken 20-30 minutes.
Save marinade. Drip-dry chicken. Brown chicken in oil over medium-high heat. Add marinade & water.
Simmer. Simmer, uncovered, for 20-25 minutes, until chicken is no longer pink. Remove bay leaf.
Servable with cooking sauce. Chicken adobo is sweet, tangy, & soy-flavored. Vinegar's acid softens the chicken's fibers. "Adobo" is Spanish for "marinate."
Traditional Filipino chicken adobo marinade is vinegar-based. Serve this savory recipe with an Almond Rice Pilaf or Veggie Rice Bowl. Guests will snack all night on these skewers & sauce.
